Smoked Jalapeño Cheddar Beef Bombs
Ingredients
1 to 2 cups Milk
10 Large Finely Diced Jalapenos
2 cups Italian Bread Crumbs
2 pounds Extra Sharp Cheddar (finely shredded)
20 Saltine Crackers (crushed)
3 tablespoons Hungarian Hot Paprika (add more if you like it hot)
3 tablespoons Dried Parsley
3 tablespoons Kosher Salt
3 ounces Worcestershire Sauce
4 tablespoons Dried Oregano
4 tablespoons Garlic Powder
4 tablespoons Ground Black Pepper
4 tablespoons Onion Powder
6 Eggs
6 pounds Ground 85/15 Beef
Directions
Preheat smoker to 225°F
Combine all ingredients and roll into balls
Place in smoker and smoke until it reaches 160°F
Some of the cheese will melt out, but not too much . There is always the option of using high temp cheese if it is available to you . Another option is to load a teaspoon of cream cheese into the center before you roll
