Light Tex Mex Shrimp Wonton Cups

Ingredients

24 wonton wrappers
2 Tbsp olive oil
24 medium shrimp peeled and deveined
1/2 tsp salt
1 teaspoon chili powder
2 limes juiced
Non-Stick Cooking Spray
1/2 c. guacamole
1/2 c. pico de gallo
2 Tbsp chives chopped

Directions

Preheat oven to 350 degrees.

Spray wonton wrappers with non-stick cooking spray. Arrange in 24 mini muffin cups. Bake in preheated oven for 5-7 minutes or until edges are just starting to brown. Remove from oven.

While wontons are baking toss the shrimp with 1 Tbsp olive oil, salt, lime juice and chili powder. Cook in skillet over medium heat, about 5-7 minutes or until they are opaque throughout.

Fill each wonton cup with guacamole, then pico de gallo and then top with one shrimp. Sprinkle chives on top of shrimp.
