Shrimp Puffs
Ingredients
2 Loaves Pepperidge Farm thin white bread
1 cup cooked shrimp
2 Tbsp chopped chives
2 Tsp grated onion
8 oz. cream cheese, softened
1/4 Tsp cayenne pepper
1/4 cup grated freshly Parmesan cheese
1/2 cup mayonnaise
Directions
Grind shrimp to a paste in a blender or food processor.
Combine all ingredients except the bread in a bowl.
Cut bread into 2″ circles or squares.
Spread shrimp mixture on thickly.
Bake at 350 for 10 – 15 minutes until slightly browned.
Serve warm or at room temperature.
These can be made ahead and frozen on a cookie sheet. Once frozen place into a zip lock bag until ready to use. From frozen bake about 20 minutes at 350 until slightly browned.
