Redneck Caviar
Ingredients
15 ounce can black beans, drained
15 ounce can black-eyed peas, drained
15 ounce can corn, drained
7 ounce can black olives, drained and sliced
2 – 3 Roma tomatoes, diced
1 small red onion. diced (about 1/2 cup)
3/4 cup bell pepper, diced (green, red, yellow, or mixed)
1 – 2 jalapeno peppers, ribs and seeds removed and diced
½ cup finely diced cilantro or parsley, optional
Dressing:
1/3 cup olive oil
1/4 cup red wine vinegar
2 garlic cloves (minced)
1 tbsp sugar
1/2 tsp sea salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp cumin
1 tsp chili powder
1 tbsp fresh lime juice
Directions
In a large bowl, combine black beans, black eyed peas, corn, black olives, tomatoes, red onion, bell peppers, jalapeno, and cilantro or parsley if using.
Mix together dressing ingredients until sugar dissolves. Pour over top veggy mix.
Chill until ready to serve
Serve with tortilla chips and enjoy!
